Starting with our own Vermont artisan cheddar, we’ve made this Vermont staple tipsy by adding two kinds of brew from a local brewer Harpoon®. We use both their Munich Dark and their IPA to soak our curds during the cheesemaking process for full ale flavor. Our imported peg mill tears the curds giving them more surface area to really soak up the flavor of the beer. Our AleHouse Cheddar leads with a fragrant ale nose, has a flavorful balance of cheddar and nuts and ends with a strong hop finish. Makes a great pairing partner to any brew.

From the northern reaches of France comes the origin of our Coulommiers-style cheese and thicker ancestor to Brie, and the name itself, Lillé. Handmade in small batches, each wheel is a slightly different weight. Aged in its own special room, and lovingly turned regularly, the delicate rind develops evenly with a white downy bloom. This decadently sumptuous soft-ripened cheese has a supple paste core enveloped by a rich creamy body and reveals a subtle mushroom nuance with notes of nut and butter. The rind gives a nice salty bite versus the delicate interior.

We started with a well-known Dutch cheese but gave it a sweet nudge by adding a little known spice, Fenugreek. This traditional Indian spice, once steeped by our proprietary process, imparts a maple and walnut nuance that we recognize and embrace here in Vermont surrounded by the sugarhouses of our neighbors. The medium firm texture of our Edam has a soft buttery note that adds just enough savory to balance the sweet. We finish our Edam by dressing in festive candy-apple red wax.

In old world Prussia, Danish immigrants were attempting to produce a cheese from their homeland but a change in cultures and humidity resulted in a more full-flavored cheese they then dubbed after their new home, Tilsit. Our 5 lb. loaf format and Danish ancestry inspired the name BrickHaus. As a washed curd cheese, we use special techniques that keep delicate curds supple until flipping for a final smooth texture. A medium firm cheese and a distant relative of the Havarti family, our BrickHaus Tilsit is rich with buttery and fruity notes and a full flavor and is also a terrific melter.

Although cheddar originates from the Village of Cheddar in Somerset England, Vermont has a long heritage of success with this classic hard cheese. Our Farmstead Cheddar is set apart from the rest by being a raw-milk, farmstead cheese ensuring that the milk comes only from the cows right here on our farm. Our unique, imported peg mill tears rather than cuts our cheese curds for an open friable texture and superb mouthfeel. Our mixed herd milk and the fact that our Farmstead cheddar is a raw milk cheese ensures that subtle flavors shine starting with a lush bite of classic cheddar taste but with a subtle sweet note and lingering hints of butter and fruit.

Using an 1800 recipe of an Old English farmhouse cheese from the green rolling hills of Wensleydale in Yorkshire, our WindsorDale is a raw-milk cheese similar to the one made famous by Wallace & Gromit. We’ve imported a European peg mill that tears the curds versus cutting, and we press the curds into tall, cylindrical traditional truckle moulds which set this cheese board star apart in both texture and flavor. This firm, flaky cheese leads with a hint of tart apple and delivers a honeyed aftertaste that pairs perfectly with all things apple.
